Finnish Pancakes

 

Yield: 8 servings
Time: 10 minutes preparation, 20 minutes cooking
Difficulty Level: Easy

Ingredients:

  • 8 large eggs (or egg beaters)
  • 1 qt. fresh milk (or fat free milk)
  • 4 to 5 tbls. sugar
  • tsp salt
  • 1 cup flour
  • 1/4 lb butter

Directions:

Melt 1/4 lb butter in pan 12" x 16". Mix lightly with beater:milk and eggs, then add sugar, salt and flour. Pour mixed batter over melted butter. Bake in 450 degree oven for 20-23 minutes. Cut recipe in half for 9" x 13" pan. Cut in fourths for 8" x 8" pan. Serve with maple syrup, jelly, or butter.

Recipe Story: Ron purchased this recipe for $1 back around 1990 or so at the "Big E" Exposition in New England. At the expo (sort of a large state fair), each of the New England states had large houses in which you could see, taste, and buy items that represented that state. (Can't remember whether it was New Hampshire or Vermont who had the Finnish Pancakes.
Finnish Pancakes are great for bunch! they still taste great with fat-free milk and no-cholesterol egg beaters or egg whites in the carton!
